Wash and cut the vegetables. Peel off the
potatoes and break them.
Add oil into a pot and stir-fry the spring
onion until it starts to turn transparent. Then, add the potatoes and the leek
cook them along with the spring onion for 4-5 minutes, and stir from time to
time.
Add water to cover the ingredients and
boil. Once boiling, shred one tablet of Organic Vegetable Broth and let it cook
for 15-20 minutes.
After that time, remove from the heat and
add one cup of Organic Soy Drink. Then, grind everything and add salt and
pepper to your taste. You can use a cone strainer to make the cream more
homogenic and softer for a finishing touch.
Vichyssoise is served cold, so it should
rest inside the fridge for six hours more or less.
When serving, you can add a spoon of brewer’s yeast or, if you prefer, some cut chive.
