Chop the
garlic and the chive and stir-fry with a little oil. Once the chive is poached,
add salt and the tomato. Cook for a few minutes and add the basil. Let it
simmer until the tomato is fried.
We can add a
little sugar or bicarbonate of soda if the tomato is sour.
Put the
chickpea flour in a bowl along with water and spices and stir until the texture
is similar to beaten eggs. Add salt and set aside.
Separately,
chop half a bag of potato chips with your hands and add the same amount of
panko. Mix well.
Pass the
seitan slices through the dough of chickpea flour, strain a little, and then pass
it through the potato and panko mixture, slightly pressing.
Fry the seitan slices or bake them in the oven at 200º with a fan until golden.
Serve with the tomato sauce, some fresh basil leaves and fried-egg flavored potato chips on the side.
