Seitan has its origin in Asian countries and is essential food cooking, since it is made from wheat gluten. It is a great alternative to meat with nutritional qualities:
Seitan is made from wheat flour, strong flours with a high gluten content. Traditional processing methods start by mixing the flour with water and kneading it until obtain an elastic consistency. Once the dough is elastic, it is washed with water to remove the starch, changing the water several times until it does not become white. Finally, the dough we have obtained is cooked with a broth to which we have added water, soy sauce and kombu seaweed. Optionally, herb and spices can be added.
As we have mentioned, seitan is a classic in veggie cooking. Moreover, it has become an ideal option for flexitarians or those who want to start including alternatives to animal protein in their diet. Seitan can be cooked in the same way you would cook meat. You can grill it, stew it, coat it in batter, fry it, or use it to prepare meatballs, for the filling of cannelloni, etc.

Ingredients:
Season the seitan with salt and pepper, brown it in a frying pan and set aside. Fry the chopped onion, peeled garlic, cloves and almonds in the same frying pan. Add the seitan, water, wine and a little salt. Cover and cook for 20-30 minutes.
This recipe is a proof that seitan can be prepared in a very similar way to meat. A good stir-fry with peppers, carrots, tomatoes and spring onions is the base to which we will add diced potatoes, our spongy seitan and mushrooms to prepare a delicious stew.
