Dear
cooking lovers, at this special time of the year, we are delighted to share
with you a recipe that everyone will love —an easy,
tasty and perfect option for all palates: our vegan quiche of vegetables and
tofu.

Ingredients:
1 vegan short-pastry
base
For the filling:
1 onion
1 leek
1 small
zucchini
10 cherry
tomatoes
250g of
tofu from Soria Natural
200ml of organic
soy drink from Soria Natural
1 tsp of
oregano
1 bunch of
basil
2 tbsp of
soy sauce
Organic
soy/oat drink
2 tbsp of nutritional
yeast
Olive oil
Directions:
1. Preheat
the oven to 180ºC. Put the short pastry in a 22-cm quiche mold, press on the
base of the mold, and prick the dough. Cover with baking paper and some weight,
preferably legumes, to prevent the dough from rising. Bake for 20 minutes.
2. Heat in
a frying pan 2 tablespoons of olive oil. Add the chopped onion and the leek in half
moons. Cook for a few minutes, then add the diced zucchini. Add salt and pepper
to taste.
3. At the
same time, place the chopped tofu, nutritional yeast, oregano, half of the basil,
soy sauce and oat milk in a blender jar. Blend until smooth. Adjust the salt as
needed.
4. Distribute
the vegetables on the pre-baked dough, pour the tofu cream over the vegetables,
and place the halved cherry tomatoes. Bake for 30 minutes at 180ºC or until the
mixture is set.
5. Garnish
with fresh basil leaves just before serving.
